server1 is a Soldier of Fortune 2 console variable (CVAR) in the UI group. Saved server browser favourite slot 1. It is empty by default.

How to change it
Open the console with ~ and type the command:
seta server1 "192.168.1.10:20100"
To keep the setting, put the same line (starting with seta) in your config file, such as sof2mp.cfg in the game's base folder.
